Marinated salmon

(for 4 persons)
1 slice of salmon at least 500 grams
3 lemons
3 tomatoes
1 red onion
4 sprigs of parsley
4 tablespoons extra virgin olive oil
black pepper

Marinated salmon


Wash and dry salmon meat with a towel. Remove skin and bones and cut into cubes.
Wash lemons. Grate the zest of two lemons and squeeze the juice from one of them.
In a bowl place salmon flesh, zest and lemon juice. Add salt to taste, cover the bowl with plastic wrap and store in refrigerator at least one hour.
Wash the parsley. A sprig is kept for decoration, others chop them finely.
Peel tomatoes by immersion in hot water. Then clean the seeds and cut pieces.
Cut the onion finely.
Remove the salmon from the refrigerator, add olive oil and season with salt and pepper. Add chopped parsley, tomatoes and onions. Mix well and leave another 15-20 minutes to cook flavors
Decorate with lemon slices and parsley.
