Baked potatoes stuffed with bacon and cheese

(for 4 servings)
4 large potatoes
200 g bacon
200 g cheese
4 eggs
salt and pepper

Baked potatoes stuffed with bacon and cheese


Wash the potatoes, then bake in the preheated oven. When ready, remove from the oven and leave to cool. Then cut the top layer of each potato. Use a spoon to gently scoop inside, leaving a thin layer of potato on peel, and without puncture the peel.
Grease inside of each potato with melted butter and sprinkle with salt and pepper. Then fill 3/4 of each potato with a layer of grated cheese and chopped bacon. Break an egg into each potato, sprinkle again with a little salt and pepper. Cover with another layer of cheese.
Place potatoes in pan on a baking sheet and bake for about 20 minutes. Egg whites should be firm but yolk should be soft.
Serve warm.
