Vegetable stew with mushrooms and quinoa

Ingredients:
250 g of quinoa (or rice)
1 can of mushrooms
10-12 roasted peppers
4 onions
6 carrots
1/2 celery (optional)
2 stems of green celery (optional)
3-4 tablespoons of tomato paste
bay leaves
salt and pepper

Vegetable stew with mushrooms and quinoa

Preparation:

Wash, peel and chop finely (or chop with the food processor) onions, carrots, celery (root and stem) and mushrooms. Cook in a pan with a little oil and water to a simmer. At the end, put bay leaves (you can put whatever herbs you want).
Boil quinoa or rice as directed on package.
Bake the peppers, clean and chop with the food processor.
Add roasted peppers and quinoa or rice in saucepan with tempered vegetables, stir and cook a little longer. At the end, add tomato paste and mixed well.
