Cauliflower paste

(Recipe suggested by Simo)
1 medium cauliflower
1 head of garlic
2 eggs
300 ml oil
2 small potatoes

Clean potatoes, cut into cubes and boil.
Unfolds cauliflower in small bouquets without too much strain, rinse well and place in a large pot with a lid, on medium heat for about 20 minutes or until is cooked enough. Then let to cool in a colander.

Once cauliflower has cooled, squeeze well by hand until juice comes out. If not wrung well, totally changes the taste of the finished preparation. Then put into a food processor and mix until it becomes a paste.

Boil an egg for mayonnaise. Prepare mayonnaise (boiled egg yolk mixing with raw egg yolk and oil).

Peel garlic, crush and mix in a bowl with a few tablespoons of oil and a teaspoon of salt until mixture is smooth thick paste.

Mash boiled potatoes until you get a puree.
Over cauliflower pasta pour mayonnaise, mashed potatoes and garlic paste. Mix well until it becomes a homogeneous composition. Add salt to taste and chopped parsley.

It can be used as an appetizer or as an garnishment to steak.
