Spinach with milk

1 kg of spinach
100 g of butter
2 tablespoons of flour
250 ml of milk

Spinach, green as can be, is washed leaf by leaf, the two waters. Then boil it with a little salt. When leaves have soaked, drain the water and chop finely.
You can drink the water in which spinach has boiled, because it is rich in iron.

Melt butter in a saucepan over medium heat. Add chopped spinach, mix well. After a few minutes, when the spinach was heated well, add flour, stirring vigorously, not to form lumps. Then add milk, stirring further, for food does not stick to the pan. Add milk until spinach have the thick cream consistence.
Add salt to taste.

With more successful and less labor, spinach and milk can be done with frozen spinach.

Serve with fried eggs, roast or french toast.
