Salmon with mexican vegetable mix

400 g salmon
400 g of mexican vegetables mix (rice, corn, peppers, mushrooms, green beans)
1/3 cup rice
salt and pepper

Salmon with mexican vegetable mix


In a pan with hot oil add the vegetables, rice and water (or chicken broth) and allow to boil until the rice is almost done. If desired, add broth or tomato juice. Then add diced salmon. When the salmon is ready, put out the fire and allow to cool, covered with a lid.
Add salt and pepper to taste.
