Peperonata with chicken

300 g chicken breast
200 g bacon
2 onions
2 carrots
6 sweet peppers
4 tomatoes
2 potatoes
1 bunch parsley
salt to taste

Peperonata with chicken


In a hot pan to cook a little bacon and diced chicken breast, just long enough to change their color. Add the chopped onion, carrots and sweet peppers cut into large strips. Mix and cook a few minutes, then add minced tomatoes and potatoes cut into small cubes. The mixture will boil in juice left by vegetables, but if needed, add water. After the potatoes were cooked add chopped parsley.
