Rice with vegetables and chicken

(for 2 servings)
2 tablespoons rice
1 chicken thigh high
2 carrots
1 parsley root
1 bunch of cauliflower or 1/2 zucchini

Rice with vegetables and chicken


Wash thigh, peel and boil.
Peel and wash the vegetables, cut in small cubes and boil them separately. When they softened slightly add two tablespoons of rice and cook mixture until the rice is done. Caution, must be stirred from time to time and have added water because rice quickly absorbe it.
When meat is cooked, chop finely and mix with rice with vegetables. If necessary, add a little of the broth in which the meat boiled.
