Pasta with chicken and zucchini

500 g chicken meat
1 packet of pasta
1 teaspoon of olive oil
1/2 onion
3 cloves of garlic
1 zucchini
1/2 teaspoon dried oregano
1/4 teaspoon paprika
3/4 cup chicken soup
1 red pepper
300 g fresh spinach
100 g light cream cheese
1/4 cup chopped fresh basil leaves
1/4 cup grated Parmesan cheese
salt and pepper to taste

Pasta with chicken and zucchini

Cut chicken meat into cubes and boil. Keep a cup of soup in which boiled, to use later.

In a large pot bring to a boil lightly salted water. When boiling add pasta and cook for 8-10 minutes. Drain and set aside.

In a pan heat the olive oil over medium heat. Add the chopped onion and sliced garlic, stirring gently until get soft. Add the chopped zucchini and diced pepper and season with oregano, salt, pepper, paprika and longer cook 10 minutes, until tender.

Pour chicken soup (about three quarters of a cup, but add more if needed) over mixture in pan and after it warmed up (about 5 minutes), add chicken meat, spinach and cream cheese. Stir until spinach is tender and cream cheese melts.

Pour the mixture over the pasta and mix well. Sprinkle with fresh basil and Parmesan cheese just before serving.
