Caesar salad

1 lettuce, washed and finely chopped
1 egg
1 clove of garlic chopped
1/2 teaspoon Worcestershire sauce
1 teaspoon anchovy paste
1 teaspoon mustard powder
1/3 cup olive oil
1/2 lemon, juiced
1/4 cup freshly grated Parmesan cheese

Caesar salad


In a pot of boiling water boil the egg for a minute. Allow to cool and separate the yolk from egg white.
Yolk is placed in a bowl with garlic, anchovy paste, Worcestershire the sauce, olive oil, mustard powder and juice of lemon. Mix well the sauce.

Place lettuce, finely chopped in a large salad bowl. Pour the sauce over and mix until salad is well coated. Add pepper to taste, sprinkle grated cheese and mix gently. Cover with croutons and serve.
