Vegetable soup

(Recipe suggested by Simo)
2 onions
4 carrots
1 small celery
1 parsnip
2 red peppers
2 green peppers
1 zucchini
50 g butter
100 ml cream
1 bunch parsley
olive oil

Vegetable soup


Wash vegetables, peel and cut into pieces approximately equal (cubes or slices, as desired).
In a pot in witch soup will boil, melt two tablespoons of olive oil and butter, then add all the chopped vegetables. Allow the heat, about 10 minutes, stirring continuously. Add a cup of water and allow to boil for 15 minutes. Then fill the pot with water and allow to boil for another hour.

Before serving add chopped parsley and sour cream.
