Tomato soup with dumplings

Ingredients for soup:
5-6 large tomatoes
1 green pepper
1/2 celery
1 onion
1 carrot
1 root of parsley
green parsley
salt and pepper

Ingredients for dumplings:
7-8 tablespoons of semolina
2 eggs
1-2 tablespoons of oil

Tomato soup with dumplings


Clean and wash the celery, peppers, onions, carrots and parsley root, then boil. Peel tomatoes and grate, thus obtaining a juice. When vegetables are boiled remove them from soup and mash them.

Over soup and tomato juice add 2 tablespoons of olive oil. Let them boil for 5 minutes, then add the mashed vegetables. Season with salt and pepper. Let boil for 20 minutes and prepare the dumplings.

Prepare the dumplings: Beat egg whites with a pinch of salt, then gradually incorporate semolina and yolks.

Decrease the heat. With a wet spoon take composition and put the dumplings into the soup. If it fall apart is that moree semolina is needed. Cover pot with lid and let boiling over low heat about 10 minutes. When the dumplings have boiled, turns off heat and let pot covered 10 minutes.
Serve warm or cold, sprinkled with plenty of parsley.
