Gazpacho

Ingredients:
Hard bread
2-3 tomatoes
2 cucumbers
1 bell pepper
1 onion
garlic (to taste 1-3 cloves)
4-5 tablespoons olive oil
4-5 tablespoons wine vinegar
Salt
Water

Gazpacho

Preparation:

Wash and clean the vegetables, then chop (in a blender) or crush and place in a large bowl.

Add the soaked bread (optional), as a thickening agent. Mix until desired consistency is achieved.

Then add cold water, olive oil, vinegar and salt to taste. Store in refrigerator.

It can serve as such,0 cold, or with garnish, of fresh bell pepper slices, diced tomatoes and cucumbers, or other fresh ingredients, with croutons or with crushed ice.

Traditionally, gazpacho is made from vegetables crushed in the mortar. This method keeps cold gazpacho longer and avoid consistency of paste and foam created by mixers (blenders).
