Beet muffins

Ingredients:
1 beetroot
2 eggs
8 heaped tablespoons of flour
4 tablespoons of sugar
1 sachet of baking powder
cinnamon
vanilla

Beet muffins

Preparation:
Boil the beet (size about two apples) unpeeled until fork enters easily into it. Allow to cool, then mash.
Over beet puree add eggs and sugar. Mix well until sugar dissolves.
In a bowl, mix flour with baking powder, and pour over the other ingredients and mix. Add cinnamon and vanilla.

Pour mixture into muffin pan and bake in preheated oven at 180 º C for 50-60 minutes.

My intention was to make red muffins, to use beet instead of dye. But, although before putting them in the oven muffins were deep red, after baking remained a sort of dark pink on the outside and the inside were golden brown.
